Did Not Make
I did not succeed on my winter chapter challenge.  Here are the recipes and their excuses on why they did not get made :-) If anyone makes these let me know and I will post it on the blog!

Ancho Chili-Cinnamon Chocolate Bark - I gave up chocolate for lent and waited too long to make this one.



Zesty Herbed Chicken Broth - I did not have the chicken carcases to make this but the word on the street is that KS is going to make this :-)

  1. As it turns out, I just roasted a chicken last night...so we're one step closer to that zesty broth! I'm making the one-pot kale & quinoa pilaf this week too, so more to come on that. Any good recipes for turkey meatloaf??

  2. Oh look at that. Let me know and you can do a guest post. I'm curious how the one pot kale turns out with the walnut oil. Here's my skinny turkey spinach meat loaf recipe:

    Skinny Turkey-Spinach Meat Loaf
    1 cup finely chopped onion
    3 garlic cloves, minced
    1 cup dry breadcrumbs
    1/2 c skim milk
    1 tbl Worcestershire sauce
    1 tsp salt
    1/2 tsp freshly ground pepper
    4 large egg whites
    1 1/2 lb ground turkey breast
    1/2 lb extra lean ground beef (guess you could just do all turkey if you want)
    2 10oz packages frozen leaf spinach, thawed, drained and squeezed dry
    1/2 c ketchup

    Preheat oven to 350.

    Heat a large nonstick skillet coated with coking spray over medium high heat. Add onion and saute 4 minutes. Add garlic and saute 30 seconds. Remove from heat. Combine onion mixture and breadcrumbs through spinach, stirring well.

    Shape meat mixture into a 12x5 inch loaf on a broiler pan coated with cooking spray. Brush ketchup over the top of the loaf. Bake at 350 for 45 minutes or until a thermometer registers 160 degrees; let stand 10 minutes before slicing.
